{My Museum Cafe} GF Salty Peanut Brownies

February 19, 2015

I think it’s time for another round of My Museum Cafe. I’m loving the combination of sweet chocolate with savoury saltiness at the moment – anyone up for some salty peanut brownies?

  • 150g dark chocolate
  • 150g butter
  • 50g gluten free flour
  • 50g cocoa powder
  • 1 teaspoon cream of tartar
  • 3 eggs
  • 150g caster sugar
  • pinch of salt
  • 100g salted peanuts, chopped

  • Pre-heart your oven to 180 C.
  • Melt the chocolate and butter. Leave to cool slightly.
  • Sieve together the flour, cocoa powder and cream of tartar
  • Whip together the eggs, caster sugar and a pinch of salt for 5 mins until light and fluffy
  • Stir the melted chocolate mixture in to the egg mixture.
  • Fold in the flour mixture and half of the peanuts.
  • Line a brownie tin with grease proof paper and pour in the mixture, then sprinkle the remaining peanuts on top.
  • Bake in the pre-heated oven for 20-25 minutes.
  • Leave to cool down fully, lift out of the tin and cut in to squares. Enjoy!

My Museum Cafe is a regular feature where I introduce recipes for special diets that are easy enough to bake, in the hope that more museum cafes will be inspired to include cakes for people with special diets on their menus. And, of course, you can bake them at home too ;-)
